Abstract
Food waste refers to food that is not consumed by patients after being served by the hospital. Food waste is influenced by internal factors, such as clinical condition, appetite, type of disease, length of hospital stay, and gender, as well as external factors, including food quality, menu variety, meal service timeliness, and staff service. High levels of food waste may result in patients' nutritional needs not being adequately met. At RSUD Ciamis, Class III patients showed a high level of food waste, particularly in plant-based protein dishes (51%) and staple foods (58%) in menu cycle 10, as well as staple foods (44%) and vegetables (42%) in menu cycle 2. This study aimed to describe the external factors affecting soft-food waste among Class III patients in the Dahlia Ward of RSUD Ciamis. A quantitative descriptive design was employed, involving 38 adult patients aged ≥19 years selected using a non-probability sampling technique. Data were collected through interviews, observations, and questionnaires.The results showed that the highest food waste occurred in staple foods (44%), vegetables (42%), and plant-based protein dishes (20%) during menu cycle 2. High food waste was associated with food taste and less appealing menu variety. In contrast, animal-based protein dishes had the lowest food waste (0%) on the fourth day, indicating better patient acceptance. Overall, good food quality, including color, aroma, taste, texture, and menu variety, was associated with lower levels of food waste.
