Abstract
ABSTRACT Mutiara Muspitasari. Designing a Flip Chart Prototype on Personal Hygiene and Sanitation for Food Handlers at the Nutrition Installation of RSUD Ciamis. Under supervision of IMA KARIMAH, M.Si Personal hygiene and sanitation are forms of compliance with Standard Operating Procedures (SOPs) for food handlers in ensuring food safety in hospital nutrition installations. Based on the results of observations and initial interviews conducted at the Nutrition Installation of RSUD Ciamis in October 2025, it was found that although SOPs were already in place, the implementation of personal hygiene and sanitation practices among food handlers was still not optimal. Some food handlers did not use Personal Protective Equipment (PPE) properly, tasted food without changing spoons, were inconsistent in washing hands at the appropriate times, and still wore jewelry while working. This study aims to develop a prototype of a flipchart on personal hygiene and sanitation for food handlers at the Nutrition Installation of RSUD Ciamis using the ADDIE model. This research employed a Research and Development method with three stages: Analysis, Design, and Development. The analysis stage showed that food handlers required a practical, engaging, and easy-to-understand visual educational media, as no specific media on personal hygiene and sanitation was available. The feasibility of the product was validated by material, media, and language experts, followed by a limited trial involving 10 food handlers. Data were analyzed using descriptive quantitative and qualitative methods. The developed prototype includes materials on proper PPE use, correct handwashing procedures, prohibition of wearing jewelry, and other hygiene practices in accordance with SOPs. The feasibility test results showed an average score of 93% (Very Feasible), while the acceptance test yielded 86.8% (Very Good). These results indicate that the flipchart is suitable for use and well accepted as an educational media. Keywords: Flipchart, Personal Hygiene, Sanitation, Food Handlers.
