Abstract

Food packaged in cans has a risk of being contaminated with the metal components that make up the can. The metal contamination will be dangerous if it enters the body's metabolism and exceeds the limit set by SNI. Metal attack is measured using Atomic Absorption Spectrophotometry (AAS) at a specific wave.The purpose of this research was to analyze lead (Pb) in canned corned beef. Samples were obtained by taking two different brands of canned corned beef from one of the Tasikmalaya City Supermarkets. The research method is descriptive with a quantitative test for measuring levels using Atomic Absorption Spectrophotometry. The sampling method used is accidental sampling. The object of research were two samples of corned beef cans with different brands. The data obtained will then be presented in the form of tables and curves. The results showed that both samples of corned beef contained lead (Pb) with a concentration value for sample A of 0.33 mg/Kg and sample B of 0.36 mg/Kg. The amount of this content does not exceed the maximum contamination limit set in SNI 3772: 2015 which is 1.0 mg/Kg. Keywords: Atomic Absorption Spectrophotometry, Canned Packaging, Lead.
