Abstract
ABSTRACT ALYA APRILLIANTI ROHMAH The Description of Soft Food Leftovers Among Class III Patient in the Surgery and Neurology RSUD Ciamis. Under supervision of YANITA LISTIANASARI Hospital nutrition services play an important role in meeting patients’ nutritional needs during hospitalization. One indicator of successful nutrition services is the low amount of patients’ food waste. High food waste can cause patients’ nutritional needs to be unmet and may hinder the healing process. This study aimed to describe soft food waste among class III patients in the Surgery and Neurology wards at RSUD Ciamis..This study used a descriptive quantitative design with 30 respondents selected using stratified random sampling technique. Data were collected through respondent identity interviews and measurement of food waste using the food weighing method for 5 days on menu cycles 9, 10, 1, 2, and 3. Data were analyzed descriptively using frequency distribution and percentage..The results showed that most respondents were aged 50–65 years (93%) and female (70%). Most patients had good food waste category (<20%), namely 60% in both the Surgery and Neurology wards. The types of food most frequently left over were vegetables and plant-based side dishes, while animal-based side dishes had the least leftovers. Food waste was higher during lunch and dinner compared to breakfast. High food waste was influenced by patients’ conditions, lack of appetite, and food taste that was considered less tasty and less savory.
