Abstract
Anemia is a global health problem characterized by low hemoglobin levels, with a prevalence of 30.7% among women aged 15–49 years according to WHO (2023). In Indonesia, the prevalence of anemia reaches 16.2%, and in Tasikmalaya Regency, it is recorded at 3.1% among adolescents (District Health Office, 2023). One of the government’s efforts to prevent anemia is through nutritional interventions for adolescent girls and women of reproductive age, including nutrition education, iron supplementation, and the consumption of iron-rich foods. A potential solution is the development of nutritious local snacks, especially those rich in iron, using local food ingredients such as catfish and mung beans. This study aimed to analyze the organoleptic properties and nutritional content of bakpao made with mung bean flour substitution. The research used descriptive analysis methods. A preliminary study tested three formulas with different ratios of wheat flour to mung bean flour: F1 (70% : 30%), F2 (60% : 40%), and F3 (50% : 50%). The best formula was F1 (70% : 30%) with an average score of 3.0 from 10 semi-trained panelists. This formula was then used in the main study by adding filling variations: F1 (25% catfish:75% mung bean), F2 (50% : 50%), and F3 (75% : 25%). In the main study, F1 (25% : 75%) was the best formula, with an average score of 4.0 (on a 1–5 scale) by 30 untrained panelists. The nutritional content of 100 grams of bakpao from F1 contained 137.5 kcal energy, 5.7 grams protein, 12.1 grams fat, 13.3 grams carbohydrates, and 3.5 mg iron, making it a suitable snack option to help address anemia in adolescents.
