Abstract
Chronic Energy Deficiency (CHD) is one of the nutritional problems in Indonesia. One of the causes of CHD is lack of energy intake. The results of the 2023 Indonesian Health Survey (IHS) showed that the prevalence of CHD in Indonesia was 20.6% among women of childbearing age. One of the efforts that can be done is to increase energy and protein intake. One of the food ingredients that contain energy and protein is mackerel and moringa leaves. 100 g of mackerel contains 125 kcal of energy, 21.3 g of protein, 3.4 g of fat and 2.2 g of carbohydrates. In 100 g of moringa flour, the energy content is 61 kcal, 6.1 g protein, 0.9 g fat and 10 g carbohydrate. The research aims to determine the organoleptic properties (color, aroma, taste and texture), as well as the nutritional content of the noodles. The type of research is experimental with descriptive analysis. Preliminary research used 3 formulations of mackerel puree addition with the best results found in Formula C (30%) with an average value of 3.4. The main research used 3 formulations of moringa flour addition with the best results found in Formula A (5%) with an average value of 3.8. Organoleptic test (hedonic scale) was conducted by 30 untrained panelists with a scale of 1-5. The nutritional content per 100 g of wet noodles with the addition of mackerel puree and moringa flour in Formula A is 262 kcal of energy, 33.6 g of protein, 16.6 g of fat and 0.2 g of carbohydrates. So in 1 serving of noodles weighing 100 g can fulfill 11.6% of energy. 23.5% protein, 8.6% fat and 10.3% carbohydrate from the RDA of WUS aged 19-29 years. This noodle can be claimed as a protein source meal. The estimated selling price of the product is Rp. 1684.00.
