Abstract
Based on the 2023 Indonesian Health Survey, the prevalence of Chronic Energy Deficiency (CED) in Indonesia is 20.6% in women of childbearing age who are not pregnant. CED is a state of long-term energy intake deficiency and can be prevented by consuming foods containing energy sources and protein. Food ingredients that can be used as a source of protein energy are soybeans and yellow corn. The nutritional content per 100 grams of soybean flour is 347 kcal of energy, 35.9 g of protein, and 29.9 g of carbohydrates and yellow corn flour is 355 kcal of energy, 9.2 g of protein, and 73.7 g of carbohydrates. One of the products that can be made is dry socks. This study aims to determine the organoleptic properties (color, aroma, texture, and taste), nutritional content (energy, protein, and carbohydrates), cost of production, and moisture content in dry salt. The type of research is an experiment with descriptive analysis. Preliminary research made dry sus with 3 formulas to substitute wheat flour with soybean flour, the most preferred formula of the panelists was Formula 1 (20%) with an average value of 4.2 (neutral). The main research used 3 formulas for adding yellow corn flour, organoleptic test (hedonic scale) by 30 panelists, the best results of Formula 2 (30%) were obtained with an average value of 5.6 (like). The nutritional content per 100 g of Formula 2 dry sus is 563 kcal of energy, 14.04 g of protein, 38.32 g of fat and 43.34 g of carbohydrates. So in 100 g of dried sus can meet the adequacy of 25.1% of energy, and 23.4% of AKG WUS protein aged 19-29 years. This dried sauce can be claimed as a source of protein food. The selling price of the product per 100 g is Rp. 5,193. The moisture content of the product using the graimetric method is 7.2%.
