Abstract
The prevalence of malnutrition status among adolescents in Indonesia is 8.1%. One of the causes of nutritional problems in adolescents is food intake. Nutritional problems can also occur in teenagers in Islamic boarding schools, one of which influences the food management system in Islamic boarding schools. The aim of the research is to see an overview of the food delivery system (input, process and output), sanitation hygiene, nutritional status of female students in class 11 MAN at the Darussalam Islamic Boarding School in Ciamis. This type of research is descriptive using primary data through interviews, observations and anthropometric measurements, secondary data includes descriptions of Islamic boarding schools. The research sample was 32 female students using the probability sampling method using cluster random sampling criteria. The research results show that most of the food management system has been implemented, but there are some that have not been implemented. For input, there are no nutritionists to regulate all food management activities, the process still has several regulations that have not been written. For the output (acceptance) of female students towards the food provided based on taste, appearance, texture and aroma, most of them rated 5 (like). The results of sanitary hygiene observations obtained a value of 74 (not good) because they did not meet the requirements for sanitary hygiene in accordance with Permenkes. The results of anthropometric measurements of nutritional status showed that female students had good nutritional status of 78.13%, less nutritional status of 15.63%, more nutritional status of 6.25%.
