Abstract
The prevalence of non-communicable (degenerative) diseases in Indonesia is increasing, one of which is cancer. Based on 2018 Riskesdas data, the cancer prevalence rate in Indonesia reached 1.79 per 1000 population. One of the factors causing the incidence of cancer is that the intake of fiber sources from daily food is insufficient. This is because the average fiber consumption in Indonesia is still low, namely 10.5 grams/day. One source of fiber is Green Binahong leaves (Anredera cordifolia). So it is necessary to develop products with food ingredients such as Green Binahong leaves, namely jelly candy. This research aims to determine the organoleptic properties and nutritional content of jelly candy from Binahong Hijau leaf juice. Type of experimental research with descriptive statistical analysis. The research consisted of 4 formulations with a ratio of Green Binahong leaf juice to mineral water, namely F1 (15% : 60%), F2 (20% : 55%), F3 (25% : 50%) and F4 (30% : 45%) . The organoleptic test used a hedonic scale test by 30 untrained panelists. The most preferred organoleptic test result wasFormula 4 with an average preference of 3.5 on a scale of 1-5 with nutritional content per 100 grams such as energy 179.7 kcal, protein 6 grams, fat 0.3 grams, carbohydrates 47, 6 grams, fiber 1.2 grams, and sugar 0.3 grams. If consumed in 1 serving of snack, fiber needs can be met by 4%. Water content 18% in accordance with SNI.
