Abstract

Penyediaan bahan makanan di pondok pesantren berperan penting dalam pemenuhan gizi santri untuk mendukung kesehatan dan kegiatan belajar. Penelitian ini bertujuan untuk mengetahui gambaran penyediaan bahan makanan, sumber perolehan, dan frekuensi penyediaan bahan makanan di Pondok Buntet Pesantren Al-Khiyaroh Cirebon. Penelitian ini menggunakan metode deskriptif kualitatif dengan teknik pengumpulan data berupa observasi, wawancara, dan dokumentasi. Hasil penelitian menunjukkan bahwa bahan makanan yang tersedia terdiri dari karbohidrat (beras), protein hewani (telur dan ayam), protein nabati (tahu dan tempe), serta sayuran (sawi, wortel, jagung, labu, terong). Sumber bahan makanan diperoleh dari pembelian dan pemberian (donasi wali santri). Frekuensi penyediaan bervariasi: sayuran dan protein nabati disediakan setiap hari, beras dua minggu sekali, dan protein hewani sebulan sekali. Tidak ditemukan penyediaan buah dalam menu harian. Kesimpulan dari penelitian ini menunjukkan bahwa penyediaan bahan makanan sudah cukup baik, namun masih perlu ditingkatkan terutama pada konsumsi protein hewani dan buah untuk memenuhi kebutuhan gizi santri secara optimal. Food provision in Islamic boarding schools plays a crucial role in meeting the nutritional needs of students to support their health and learning activities. This study aims to determine the food supply, sources of supply, and frequency of provision at Pondok Buntet, Al-Khiyaroh Islamic Boarding School, Cirebon. This study used a qualitative descriptive method with data collection techniques including observation, interviews, and documentation. The results indicate that the available food consists of carbohydrates (rice), animal protein (eggs and chicken), vegetable protein (tofu and tempeh), and vegetables (mustard greens, carrots, corn, pumpkin, and eggplant). Food sources are obtained through purchases and donations (donations from students' guardians). The frequency of provision varies: vegetables and vegetable protein are provided daily, rice every two weeks, and animal protein once a month. No fruit is included in the daily menu. The conclusion of this study indicates that food provision is adequate, but there is still room for improvement, particularly in the consumption of animal protein and fruit, to optimally meet the students' nutritional needs.
