Abstract
Penatalaksanaan Diet Penyakit Jantung dengan Asupan Lemak Jenuh, Karbohidrat, dan Serat pada Pasien Coronary Heart Disease (CHD) Di Ruang Rawat Inap Rumah Sakit Permata Cirebon (Studi Kasus) Kalista Mayda1, Hj. Alina Hizni, SKM, MPH2 INTI SARI Coronary Heart Disease (CHD) Penyakit Jantung Koroner (PJK) atau merupakan salah satu penyakit tidak menular yang menjadi penyebab kematian tertinggi di dunia. Menurut WHO (2019), sekitar 17,9 juta orang meninggal akibat penyakit jantung, dengan CHD menyumbang 32% dari seluruh kematian global. Di Indonesia, data Riskesdas 2018 menunjukkan bahwa prevalensi CHD mencapai 1,5% dari populasi, dan menjadi penyebab kematian terbesar sebesar 26,4%. Salah satu faktor risiko yang dapat dimodifikasi dalam pencegahan CHD adalah pengaturan pola makan, terutama pengendalian konsumsi lemak jenuh, karbohidrat, dan peningkatan serat. Penelitian ini bertujuan untuk mengetahui penatalaksanaan diet pasien CHD di Ruang Rawat Inap Rumah Sakit Permata Cirebon dengan menilai rata-rata asupan lemak jenuh, karbohidrat, dan serat. Desain penelitian ini adalah deskriptif observasional dengan pendekatan studi kasus terhadap dua pasien CHD yang dipilih berdasarkan kriteria inklusi. Metode pengumpulan data meliputi wawancara, observasi, food recall 3x24 jam, dan penimbangan makanan. Hasil penelitian menunjukkan bahwa rata-rata asupan lemak jenuh kedua pasien adalah 124,7% dari Angka Kecukupan Gizi (AKG), menunjukkan kelebihan konsumsi. Rata-rata asupan karbohidrat adalah 61,5% dari total energi, tergolong tinggi. Sedangkan rata-rata asupan serat hanya 14,2 gram per hari, jauh di bawah rekomendasi ≥25 gram per hari. Temuan ini mengindikasikan perlunya edukasi gizi yang berkelanjutan serta pemantauan asupan zat gizi untuk mendukung pengendalian CHD secara optimal. Alina Hizni, SKM, MPH2 ABSTRACT Coronary Heart Disease (CHD) or Coronary Heart Disease (CHD) is one of the non-communicable diseases that is the leading cause of death worldwide. According to WHO (2019), approximately 17.9 million people died from heart disease, with CHD contributing 32% of all global deaths. In Indonesia, the 2018 Riskesdas data indicate that the prevalence of CHD reaches 1.5% of the population, making it the largest cause of death at 26.4%. One modifiable risk factor in the prevention of CHD is dietary regulation, particularly controlling the consumption of saturated fats, carbohydrates, and increasing fiber. This study aims to determine the management of the diet of CHD patients in the Inpatient Ward of Permata Cirebon Hospital with to assess the average intake of saturated fat, carbohydrates, and fiber. This research design is descriptive observational with a case study approach involving two CHD patients selected based on inclusion criteria. Data collection methods include interviews, observations, 3x24-hour food recalls, and food weighing. The results show that the average saturated fat intake of both patients is 124.7% of the Nutritional Adequacy Rate (AKG), indicating excessive consumption. The average carbohydrate intake is 61.5% of total energy, classified as high. Meanwhile, the average fiber intake is only 14.2 grams per day, far below the recommended ≥25 grams per day. These findings indicate the need for ongoing nutritional education and monitoring of nutrient intake to support optimal CHD management.
