Abstract
Pondok pesantren merupakan institusi pendidikan yang memiliki tanggung jawab dalam menyediakan makanan yang memenuhi kebutuhan gizi santri. Penelitian ini bertujuan untuk mengetahui gambaran menu dan tingkat kecukupan gizi makanan yang disediakan di Pondok Pesantren Al-Husen Kabupaten Majalengka, mencakup siklus menu, frekuensi penyajian, pola menu, dan kecukupan gizinya. Penelitian ini bertujuan untuk mengetahui gambaran menu dan tingkat kecukupan gizi yang disediakan di Pondok Pesantren Al-Husen. Penelitian ini merupakan studi deskriptif observasional dengan pendekatan kuantitatif dan kualitatif. Data dikumpulkan melalui observasi dan wawancara terhadap satu orang pengelola dapur serta food weighing selama tujuh hari. Kandungan gizi dianalisis menggunakan aplikasi Nutrisurvey dan dibandingkan dengan Angka Kecukupan Gizi (AKG) berdasarkan PMK No. 28 Tahun 2019. Hasil penelitian menunjukkan, bahwa siklus menu yang diterapkan oleh pondok pesantren yaitu siklus menu 7 hari. Frekuensi penyajian menu dengan penyajian 2 kali makan pada pagi dan siang yaitu makanan pokok 14x, lauk hewani 3x, lauk nabati 10x, sayuran 2x, dan buah-buahan tidak disajikan sama sekali. Pola menu umumnya 2 komponen yaitu makanan pokok dan sayuran atau makanan pokok dengan lauk nabati. Berdasarkan hasil penelitian, tingkat kecukupan gizi dari siklus menu 7 hari pada santri menunjukkan ketidakseimbangan asupan zat gizi makro. Pada santri perempuan usia 13–15 tahun dan 16–18 tahun, kecukupan energi berada pada kategori normal (100,5% dan 98,2%), namun protein hanya mencapai 76% (defisit sedang), lemak sangat rendah yaitu 36,6% (defisit berat), dan karbohidrat berlebih sebesar 132,7%. Sementara itu, santri laki-laki usia 13–15 tahun memiliki kecukupan energi 85,9% (defisit ringan), protein 70,6% (defisit sedang), lemak 32% (defisit berat), dan karbohidrat 113,8% (normal). Pada kelompok usia 16–18 tahun, kecukupan energi turun menjadi 76,8% (defisit sedang), protein 65,9% (defisit berat), lemak 30,1% (defisit berat), dan karbohidrat 99,5% (normal). Hasil ini menunjukkan bahwa menu yang tersedia masih belum mencukupi kebutuhan energi dan zat gizi makro secara seimbang, terutama protein dan lemak. Islamic boarding schools (pesantren) are educational institutions responsible for providing food that meets the nutritional needs of their students. This study aims to determine the menu description and nutritional adequacy of the food served at Al-Husen Islamic Boarding School in Majalengka Regency, including the menu cycle, serving frequency, menu patterns, and nutritional adequacy. This study aims to determine the menu description and nutritional adequacy level provided at Al-Husen Islamic Boarding School. This is a descriptive observational study using quantitative and qualitative approaches. Data were collected through observations and interviews with one kitchen manager, as well as food weighing for seven days. Nutritional content was analyzed using the Nutrisurvey application and compared with the Nutritional Adequacy Intake (RDA) based on Minister of Finance Regulation No. 28 of 2019. The results indicate that the menu cycle implemented by the Islamic boarding school is a 7-day menu cycle. The menu is served twice a day, morning and afternoon, with 14 staple foods, 3 animal-based side dishes, 10 vegetable-based side dishes, 2 vegetables, and no fruit at all. The menu generally consists of two components: staple foods and vegetables, or staple foods and vegetable side dishes. Based on the research results, the nutritional adequacy level of the 7-day menu cycle among students showed an imbalance in macronutrient intake. For female students aged 13–15 and 16–18, energy adequacy was within the normal category (100.5% and 98.2%), but protein was only 76% (moderate deficit), fat was very low (36.6%) (severe deficit), and carbohydrates were excessive at 132.7%. Meanwhile, male students aged 13–15 had an energy sufficiency of 85.9% (mild deficit), protein 70.6% (moderate deficit), fat 32% (severe deficit), and carbohydrate 113.8% (normal). In the 16–18 age group, energy sufficiency dropped to 76.8% (moderate deficit), protein 65.9% (severe deficit), fat 30.1% (severe deficit), and carbohydrate 99.5% (normal). These results indicate that the available menu still does not meet balanced energy and macronutrient needs, especially protein and fat.
