Abstract

Stunting is a long-term malnutrition problem characterized by PB/U or TB/U results that are below the threshold (Z-Score) from -2 SD to -3 SD. Based on data from the 2022 National Nutrition Status Survey, the prevalence of stunting in Tasikmalaya Regency is 27.5%. One of the factors causing stunting is insufficient nutritional intake, especially protein, calcium and zinc. Efforts to prevent stunting occur by providing additional food high in protein, calcium and zinc for toddlers. Mackerel and soybean flour are food ingredients that can be used to make additional food. This research aims to determine the organoleptic properties (color, aroma, taste and texture) and nutritional content of silky mackerel pudding and soybean flour. Type of experimental research with descriptive analysis. The organoleptic test uses the hedonic scale test. Nutritional calculations refer to the 2017 Indonesian Food Composition Table (TKPI) and use Ms. Office. The research consisted of 5 formulas with a ratio of mackerel and soybean flour, namely F1 (85%: 15%), F2 (75%: 25%), F3 (65%: 35%), F4 (55%: 45%), F5 (45%:55%). Organoleptic test by 30 untrained panelists. So the best formula is obtained, namely F1 with an overall average value of 3.8. The nutritional value per 100 g of silky pudding F1 is 137.3 kcal energy, 4.8 g protein, 0.4 mg zinc and 124.7 mg calcium. In 1 cup (50 g) silky pudding can meet the RDA of 4.8% energy, 11% protein, 0.2% zinc and 9.4% calcium. So consuming 3 cups of silky pudding can meet the AKG. Estimated selling price for F1 products Rp. 4,261/100 grams.
