Abstract
Menu planning, planning food needs, budget planning, food procurement, receiving and storage, cooking food, distribution and recording, reporting and evaluation are all parts of hospital food management.. The purpose of food management is to provide nutritional needs of patients and hospital employees for nutritional needs. The percentage of food service venues that meet the requirements in the West Java area is 19.28%, while the target according to the Indonesian Ministry of Health's Strategic Plan is 26%. Therefore, food management is very depend on hygiene and sanitation so the food doesn’t become a source of disease transmission for those who consume it. The aim of this research is to determine the implementation of personal hygiene and sanitation in food preparation at the X Ciamis General Hospital Nutrition Installation . This research is a descriptive study, the research was carried out over 2 days, with a total population and sample of 18. The sample must meet the inclusion and exclusion criteria. The research variables are personal hygiene and sanitation in food management. Data was obtained from interviews and observations. The results of personal hygiene research showed that personal hygiene results were good for 83% and 17% were fair. The results of the hygiene and sanitation suitability test for the class B food service group at the X Ciamis General Hospital Nutrition Installation have met the requirements with a score of 87. Categories that haven’t met the maximum score are doors, ventilation in the room, toilet facilities, and grease trap.
