Abstract

Riskesdas data in 2018 stated that the prevalence of obesity in Indonesia was 21.8%, in West Java 18.65 and in Tasikmalaya itself 13.7%. Black sticky rice has the potential to be a functional food that has a high fiber content and can prevent obesity. Red beans can control weight because they provide a feeling of fullness for longer due to their fiber content. Mochi is a favorite choice for teenagers as a practical light snack that has a unique appeal with its chewy texture and delicious sweet taste. So it is necessary to develop snack products for teenagers that are rich in fiber in the form of black sticky rice mochi. This type of research is an experiment with descriptive data analysis. This research aims to determine the organoleptic properties (color, aroma, taste, texture) and nutritional content (energy, protein, fat, carbohydrates and fiber). The organoleptic test was carried out using a hedonic scale test by 30 untrained panelists on a scale of 1-5. This research consisted of two stages, namely preliminary research by making black sticky rice flour and the main research consisting of 3 variations of the formula with a comparison between black sticky rice flour and white rice flour, namely formula 1 (50% : 50%), formula 2 (60% : 40% ), formula 3 (70% : 30%). The results of the organoleptic test research in the main research by 30 untrained panelists on formula 3 (70% : 30%) on color, aroma, taste and texture had an average color of 3.5, aroma 3.2, taste 3.45, and texture 2.8 on a scale of 1-5. The nutritional content in 100 grams of Formula 3 black sticky rice mochi is as follows: energy 146.61 kcal, protein 4.50 grams, fat 0.97 grams, carbohydrates 29.94 grams and fiber 0.80 grams. The cost of production and selling price per 100 grams of Formula 3 is Rp. 5,505.00 and Rp. 6,606.00. Key words: obesity, mochi, organoleptic test, nutritional content
