Abstract

GAMBARAN PERENCANAAN MENU DIET DIABETES MELLITUS DI RUMAH SAKIT PERMATA CIREBON Laila Komalasari1, Uun Kunaepah, SST, M.Si2 ABSTRAK Diabetes Mellitus (DM) merupakan penyakit tidak menular yang memerlukan pengaturan diet sebagai salah satu upaya pengendalian kadar glukosa darah. Dalam penyelenggaraan makanan rumah sakit, perencanaan menu memiliki peran penting dalam menyediakan makanan yang sesuai dengan kebutuhan gizi pasien diabetes mellitus. Perencanaan menu yang baik dapat membantu memenuhi kebutuhan zat gizi serta mendukung proses penyembuhan pasien. Penelitian ini bertujuan untuk mengetahui gambaran perencanaan menu diet Diabetes Mellitus di Rumah Sakit Permata Cirebon. Penelitian ini merupakan penelitian deskriptif observasional dengan desain cross sectional. Data dikumpulkan melalui observasi, wawancara terstruktur, dan telaah dokumen mengenai standar diet, standar makanan, standar porsi, pedoman menu, pola menu, siklus menu, frekuensi bahan makanan, master menu, dan format menu. Data yang diperoleh dianalisis secara deskriptif. Hasil penelitian menunjukkan bahwa Rumah Sakit Permata Cirebon telah menerapkan beberapa komponen perencanaan menu seperti standar porsi, pola menu, siklus menu, frekuensi bahan makanan, master menu, dan format menu. Siklus menu yang digunakan yaitu siklus menu 10 + 1 hari dan masih mengacu pada menu umum rumah sakit dengan penyesuaian beberapa bahan makanan sumber karbohidrat untuk pasien diabetes mellitus. Namun, dokumen standar diet diabetes mellitus, standar makanan, dan pedoman menu khusus diet DM belum disusun secara khusus. Kesimpulan penelitian menunjukkan bahwa perencanaan menu diet Diabetes Mellitus di Rumah Sakit Permata Cirebon sudah berjalan cukup baik, namun masih diperlukan pengembangan dokumen khusus diet DM agar pelayanan gizi lebih optimal dan sesuai dengan kebutuhan pasien. In hospital food management, menu planning plays an important role in providing food that meets the nutritional needs of patients with diabetes mellitus. Good menu planning can help fulfill nutritional requirements and support the healing process of patients. This study aims to describe the menu planning for a Diabetes Mellitus diet at Permata Cirebon Hospital. This study is an observational descriptive study with a cross-sectional design. Data were collected through observation, structured interviews, and document review regarding diet standards, food standards, portion standards, menu guidelines, menu patterns, menu cycles, food frequency, master menus, and menu formats. The obtained data were analyzed descriptively. The research results indicate that Permata Cirebon Hospital has implemented several menu planning components such as portion standards, menu patterns, menu cycles, food frequency, master menu, and menu format. The menu cycle used is a 10 + 1 day menu cycle and still refers to the general hospital menu with adjustments to some carbohydrate food ingredients for patients with diabetes mellitus. However, the documents for diabetes mellitus diet standards, food standards, and special DM diet menu guidelines have not been specifically prepared. The research conclusion shows that the planning of diabetic diet menus at Permata Cirebon Hospital has been running quite well, but the development of a special DM diet document is still needed so that nutrition services are more optimal and in accordance with patient needs.
