Abstract

The prevalence of fiber consumption in Indonesia remains very low and constitutes a significant nutritional problem. The 2023 Indonesian Health Survey (SKI) showed that 96.7% of Indonesians aged 5 and over did not meet the recommended consumption of fruits and vegetables as the primary source of fiber. The development of functional foods that are practical and can also increase the community's fiber intake is urgently needed and can be made from high-fiber foods such as rolled oats, beetroot, and red spinach. The research method used an experimental design with descriptive analysis. The organoleptic test involved 30 untrained panelists using the Hedonic Scale Test method. Nutritional calculations used the Indonesian Food Composition Table (TKPI) and Microsoft Excel software, while water content was determined by the thermogravimetric method. In stage 1, the best snack bar formula was obtained, namely F2 (80% rolled oats: 20% red spinach flour). The best formula was applied in stage 2 of the study with the addition of beetroot puree, namely 10%, 20%, and 30%. The results of the organoleptic test conducted on 30 untrained panelists obtained the best formula F2 with an average value of 4.9 for color parameters, 4.6 for taste parameters, 4.5 for aroma parameters, and 4.5 for texture parameters on a scale of 1-7. The nutritional value per 100 g of snack bar formula 2 is 372.4 kcal of energy, 19.5 g of protein, 7.1 g of fat, 56.3 g of carbohydrates, and 9.52 g of fiber. The snack bar can now be claimed to be high in fiber because it meets the requirements for a high-fiber claim in accordance with the Food and Drug Monitoring Agency (BPOM) Regulation Number 1 of 2022 concerning Supervision of Claims on Processed Food Labels and Advertisements, which states that solid food can be claimed to be high in fiber if it contains at least 6 grams of fiber per 100 grams of product.
