Abstract

According to 2023 SKI data, the prevalence of anemia among adolescent girls in West Java reached 28.8%, primarily due to inadequate iron intake. Intervention programs involving the distribution of iron supplements often face compliance challenges due to side effects such as nausea. Therefore, innovation through the provision of iron-rich supplementary foods (PMT) has become a crucial alternative solution. This study aims to formulate a steamed bun product using local food ingredients (mocaf flour and chicken liver) through an experimental research design and descriptive analysis. The primary focus of the first phase of the study was to determine the optimal formulation for the steamed bun dough, involving a comparison of the proportions of wheat flour and mocaf: F1 (80%:20%), F2 (70%:30%), and F3 (60%:40%). The results of the first-stage organoleptic test identified F1 (80%:20% wheat-mocaf) as the selected formula with an average score of 5.1 (“somewhat like”). In the second stage, product development with chicken meat filling and chicken liver substitution was conducted using three variations (F1, F2, F3). The results of the sensory evaluation indicated that formulation F2 (65%:35%) was the best, with an average score of 5.1 (“somewhat like”). Nutritionally, per 100 grams, F2 steamed buns contain 303.7 kcal of energy, 7.8 g of protein, 11.2 g of fat, 44.5 g of carbohydrates, and 3.3 mg of iron. This product meets 22% of the daily iron requirement for adolescent girls aged 16–18 and qualifies as a source of iron (≥15% RDA). Finally, a full costing analysis determined the cost of goods sold (COGS) to be Rp74,932.88, with a selling price of Rp11,989.26 per 100 grams.
