Abstract

Malnutrition is a serious form of nutritional deficiency in toddlers. The results of the Indonesian Nutritional Status Survey (SSGI) in 2022 showed that the prevalence of malnutrition in toddlers increased by 7.7%. The purpose of this study was to create supplementary food for malnourished toddlers by making cream soup using pumpkin and shrimp as raw materials. Pumpkin cream soup is an ideal food for toddlers due to its smooth texture. Also to determine organoleptic assessment, nutritional content estimation, nutrient content analysis, and nutritional contribution. This type of research is experimental with a Completely Randomized Design (CRD) and uses a Hedonic Scale Test. Three treatment variations were carried out with two replications, resulting in a total of six replications. The organoleptic assessment was carried out by 30 semi-trained panelists who were second and third year students of the Cirebon Nutrition Diploma III Study Program, Poltekkes Kemenkes Tasikmalaya and the calculation of estimated nutritional content used the 2020 Indonesian Food Composition Table (TKPI). This study produced the best product with an average value of the overall F1 parameter of 4.25 (like) which was higher than F2 (4.0), and F3 (3.55) with F1 content of 67 kcal of energy, 8.83 grams of protein, 1.94 grams of fat, and 3.52 grams of carbohydrates.
