Abstract

According to Riskesdas (2018), the prevalence of anemia among adolescents in Indonesia is 32%. One of the factors causing anemia is a lack of iron intake. Efforts that can be made are to make food from iron-rich local foodstuffs such as eel, mocaf flour, and moringa flour. The iron content per 100 g of eel is 4.9 mg, mocaf flour is 15.8 mg, and moringa leaf flour is 28.2 mg. Products that can be made as an alternative food are meatballs which can be used as a snack for teenagers. The purpose of this study was to determine the organoleptic properties and nutritional content of mocaf eel meatballs with substitution of moringa leaf flour. This type of research is an experiment with descriptive analysis. The research was conducted at the Tasikmalaya Ministry of Health Health Polytechnic Food Technology Laboratory. The organoleptic test was carried out by 30 untrained panelists, namely young women. The main research made 4 meatball formulas with a ratio of eel: mocaf: moringa flour, namely Formula A (71%:24%:5%), B (68%:22%:10%), C (64%:21%:15% ), and D (60%:20%:20%). The organoleptic test results showed that the most preferred formula was Formula A with a preference value for color 3.3, aroma 3, taste 3 texture 3.1 and an overall average score of 3.1 with a scale of 1-5. The nutritional value of Formula A per 100 grams contains energy of 136.02 kcal, protein of 7.54 g, fat of 5.63 g, carbohydrates of 13.27 g and iron (Fe) of 2.98 mg. In one portion of meatballs, which is equivalent to 6 meatballs (30 g) per one meal, it can meet the Nutrition Adequacy Rate for adolescent Fe intake by 20-25%.
