Abstract

The prevalence of anemia in Indonesia among adolescents aged 15-24 in 2018 is 32%. Anemia is a condition when the level of hemoglobin in the blood is below the normal limit, namely ≤12 g/dl. Factors causing the high incidence of anemia in adolescents include low iron intake. Iron can be obtained from plant-based food sources, such as 100 g of red beans containing 10.3 mg of Fe and 100 g of green spinach containing 3.5 mg of Fe. Both of these ingredients can be made into a snack product in the form of cookies. This study aims to describe the organoleptic properties and nutrient content of red bean flour substitution cookies with the addition of green spinach flour. Test the organoleptic properties using the hedonic scale test by 30 untrained panelists. Calculations of nutrient content were analyzed with the help of secondary data obtained from Indonesian Food Composition Tables and Microsoft Excel. This type of research is an experiment with descriptive analysis techniques. The results of the organoleptic test in the preliminary study showed that the most preferred cookie formula was formula A, a ratio of wheat flour to red bean flour (40%:60%) added with green spinach flour in the main study with percentages of 40%, 50%, 60%, 70%. The results of the organoleptic test of the most preferred formula in the main research were Formula A with a ratio of wheat flour: kidney bean flour + green spinach flour (40%: 60%: 40%) with an average value of all parameters, namely 3.3. The energy content of Formula A per 100 g is 475.6 Kcal, 10.1 g protein, 26.2 g fat, 49.6 g carbohydrates and 4.2 mg iron. So that these cookies can fulfill 23.3% of Fe adequacy in adolescents based on the 2019 RDA. Keywords: Cookies, Red Bean Flour, Green Spinach Flour, Anemia, Adolescents
